Since normally my New Year's Resolutions are long forgotten by February 1st, my low carb "diet" was never a resolution for 2017. It is a lifestyle change, a way of eating (WOE) if you will.
As with every aspect of life, there were good days and not so good days. Overall in the month of January good won out over evil on enough days to make a grand total of 11 pounds lost!
I like to break things down: That's an average of 2.4 pounds per week (giving January 4.5 weeks) and an average of .35 pounds a day (31 days).
January was not without it's struggles. I spent 3 Mondays (Mondays are weigh in days for me) hovering within 3 pounds of each other. Super frustrating, highly un-motivating. I pushed through and really 11 pounds in one month is not bad.
For February I have some recipes I'm pretty excited to try including a deviled egg twist (I hate deviled eggs so this should be interesting) and mushroom cap "pizzas". I'm also planning a tweak to the cream cheese pancake recipe previously posted. I'm not sure if it will be an update to that recipe or a completely new thing.
I've also been considering creating a local low carb Facebook group. I LOVE love love the "Low Carb and Losin It Original Group" I have been on for a few months now. I personally would like to feel the local support. Maybe get together in person - obviously to eat!! But to make that personal connection with one another so it's a less lonely journey and of course for world peace.
